Portabello Marinara
Ingredients:
2 Large Portabello Mushrooms
1 jar of Low Sodium Marinara
Balsamic Vinegar
Canary Island Garlic and Herb Olive Oil
Cuban Bread
Low Fat Mozzarella
Directions:
Wash the mushrooms and slice into long slices. Leave the stem on. Add 3 Tbl of Canary Island Garlic and Herb Olive Oil to a sauté pan and place on med to low heat and watch for tiny bubbles in the olive oil to appear. Place the Mushroom slices in the pan and add a couple of dashes of Balsamic Vinegar to the Mushrooms.
Next, sauté until the mushrooms begin to turn black, but they are not burnt. By this time they will begin to get tender. If you remove them before they are black they will not be done. When done place on the open Cuban Bread.
Then, spoon the marinara over the mushrooms and top with a small amount of low-fat mozzarella. Drizzle the Canary Island Garlic and Herb Olive Oil over the cheese.
Finally, place in the oven and broil, only a short time, you will want to watch this because it will cook very quickly. Remove from the oven and serve by itself or with a nice salad. Sit back and watch them go wild!
Roasted Tomato Feta Spinach Pizza
Ingredients:
Handmade Pizza Crust
Ricotta cheese
Organic baby spinach
Chopped fresh spinach
chopped onions
sliced zuccini
shredded red cabbage
Low fat Mozzarella
Feta Cheese
Sliced Tomatoes
Canary Island Garlic and Herb Olive Oil
Directions:
First, layer the dough (a good one you can buy in Publix is the Boboli Crust) with the ingredients in the order they are listed.
Next, drizzle the Canary Island Garlic and Herb Olive Oil over the top of the pizza.
Finally, bake on 375 degrees until the cheese melts and browns and serve with a organic salad.
BBQ Big Texan "Steak" Burger
Ingredients:
Cuban Bread
Vegetarian Steak Burger
Mustard
Pickles
Jalapenos
Tomatoes
Onions
BBQ Sauce
Low Fat Mozzarella Cheese
Canary Island Garlic and Herb Olive Oil
Directions:
Cook the Vegetarian Burger in the Canary Island Garlic and Herb Olive Oil til heated thru. Slice Cuban bread open and place mustard and pickles on bottom piece of bread. Place the Burger on top of pickles.
Then add sliced tomatoes, onions and jalapenos on top of burger and drizzle with BBQ sauce. Top with a small amount of cheese the low fat mozzarella is good. Drizzle the cheese and the top piece of bread with the Canary Island Garlic and Herb Olive Oil.
Last, place the sandwich in the oven and set it on broil. You will need to watch the sandwich because it will cook very quickly. When the cheese is browned , remove and it is ready to devour. Serve with potato salad or a baby greens salad.

1 Carton of Egg Beaters

Chopped veggies of your choosing
ex.) bell peppers, onions, fresh broccoli, spinach)
Canary Island Garlic and Herb Olive Oil
Tortillas
Directions:
Put 3 Tbl Canary Island Garlic and Herb Olive Oil in a pan on lower to medium heat, watch for tiny bubbles to appear and then add the carton of Egg Beaters. Add your favorite veggies. Stir until done.
Next, get out a tortilla and place the eggs and veggies down the middle, top with our homemade salsa leaving about one inch on both sides so you can tuck the ends in and then roll.
You may brown the tortillas in the same pan you cooked the eggs in or toast in a toaster oven till brown. You don't have to toast them and it is super fast to just roll and serve. You are gonna Love it and it's great for eating in the car!
